I love pesto! As a newer vegan I'm sure I'll be adapting this recipe over time. But for now this recipe satisfied me just fine. I didn't even miss the Parmesan cheese!
1/2 cup extra virgin olive oil
1/2 cup walnuts
1 cup packed basil
3 whole cloves garlic
2 teaspoons lemon juice
1 teaspoon coarse sea salt (or to taste)
Blend in a food processor until blended.
